This is a recipe that I find myself adjusting frequently. I prefer to look at it like a skeleton, and make adjustments depending on my ingredients. When I’m using buttermilk bread from the Farmer’s Market, its a bit sweet on it’s own. So, sometimes I’ll reduce the sugar in the batter if I’m not looking for as much sweetness. The same goes for syrup. Saskatoon berry syrup is a bit tart, but maple syrup very sweet. Depending on which topping I decide to go with, I might cut the sugar out of the batter completely.

French Toast with Roasted Pears and Drizzled Honey
French toast made simple

Ingredients
- 8 Slices Buttermilk Bread, or preferred white bread
- 2 Pears, halved lengthwise (1 half per person)
- 4 Large Eggs
- 1/2 Cup Milk
- 1 Tsp Real Vanilla Extract
- 1 Tbsp Sugar
- 1/2 Tsp Cinnamon
- Approx. 4 Tbsp Butter
- Saskatoon Berry Syrup, or preferred syrup
- Cinnamon, to sprinkle
Instructions
- Preheat the oven to 350 degrees Fahrenheit.
- Using a measuring spoon, scoop out the seeds and tough centre of the pears. Place each half on a baking sheet (skin down), sprinkle with cinnamon, and drizzle with honey. Bake until soft and slightly brown. About 30 minutes, depending on their ripeness. If the pears are finished before the French Toast, place them somewhere they will keep warm.
- In a small bowl, mix together the sugar and cinnamon.
- In a wide bowl, combine the eggs, milk, and cinnamon sugar. Whisk well.

- Place a skillet over medium-high heat. Once hot, melt 1 tbsp of butter. Working in batches, coat each slice of bread in batter, and place in the pan. If you’re able to fit more than 2 slices at a time, consider adding a bit more butter. Once the slices are golden brown and ready to flip, add a second tbsp of butter, and continue frying the other side. Adjust the heat if necessary. When both sides are finished, transfer the slices somewhere to keep warm, and repeat the whole process until finished.
- For extra richness, top each slice with some butter before drizzling with syrup, and serve 2 slices with half a pear.
